Potatoes & Onions

10 Potatoes, sliced � cup oil

5 onions, sliced salt & pepper to taste

2 lb bacon

Put 2 lb bacon in 12" oven. Cook until almost done. Add slices of potatoes and onions. Put in plenty of salt and pepper. Cook for 20-30 minutes checking every 10-15 minutes. Stir only if needed.

Cheesy Veggies

� cup margarine

4-5 potatoes, sliced & quartered 1 � lb tub cottage cheese

1 lb frozen broccoli � small tub sour cream

1 lb frozen corn 1 cup shredded cheddar cheese

3 cups sliced carrots 1 cup shredded Colby jack cheese

1 medium onion, diced 1 cup shredded mozzarella cheese

Seasoning to taste Bread crumbs

Melt margarine in oven. Add veggies and saut�. Mix in cottage cheese and sour cream. Stir in seasoning to taste. Top with cheeses and cover with bread crumbs. Bake from top for approx 45-60 minutes or until veggies are cooked through
