Potatoes & Onions
10 Potatoes, sliced ½ cup oil
5 onions, sliced salt & pepper to taste
2 lb bacon
Put 2 lb bacon in 12" oven. Cook until almost done. Add slices of potatoes and onions. Put in plenty of salt and pepper. Cook for 20-30 minutes checking every 10-15 minutes. Stir only if needed.Â
Cheesy Veggies
¼ cup margarine
4-5 potatoes, sliced & quartered 1 ½ lb tub cottage cheese
1 lb frozen broccoli ½ small tub sour cream
1 lb frozen corn 1 cup shredded cheddar cheese
3 cups sliced carrots 1 cup shredded Colby jack cheese
1 medium onion, diced 1 cup shredded mozzarella cheese
Seasoning to taste Bread crumbs
Melt margarine in oven. Add veggies and sauté. Mix in cottage cheese and sour cream. Stir in seasoning to taste. Top with cheeses and cover with bread crumbs. Bake from top for approx 45-60 minutes or until veggies are cooked through.Â
